The WhiteWater System relies on the oxidation power of ozone (O3). When ozone-infused water comes into contact with grease, soil, pathogens, etc., the ozone molecules in the water quickly and aggressively react with and kill cells in the grease, soil, etc. In sanitizing applications, this killing action is all that is required. In cleaning & sanitizing applications, the WhiteWater System takes advantage of the fact that the killing action removes the cells’ polarity, which in turn breaks the attractive molecular bond between the grease or soil and any adjacent hard surface (stainless steel, conveyor belt, etc.). Water is then used to sweep away the grease or soil. The major components of a WhiteWater System utilize ozone in the following ways:

  • Permanently-mounted WhiteWater Spray Bars continuously apply low-pressure ozone-infused cold water to food product during production. The low-pressure ozone-infused water reacts with and kills pathogens on the food's surface, insuring that food quality is maximized. In ready-to-eat applications, the ozone-infused water will in many cases adhere to the product, thereby increasing yield.

  • Permanently-mounted WhiteWater Spray Bars continuously apply low-pressure ozone-infused cold water to conveyor belts and other product contact surfaces during production. The low-pressure ozone-infused water breaks the attractive molecular bond between soils and equipment and thereby insures that clean surfaces are maintained throughout the day.

  • Handheld WhiteWater Spray Stations are used during off-hours sanitation to simultaneously apply, in two parallel streams, low-pressure ozone-infused cold water and high-pressure cold water to dirty equipment. The low-pressure ozone-infused water rapidly breaks the attractive molecular bond between soils and equipment while the high-pressure water drives the soils from the equipment, thereby cleaning and sanitizing dirty surfaces.

  • An ozone supply system generates ozone from air, mixes the ozone into low- pressure cold water, and delivers the low-pressure ozone-infused cold water to the WhiteWater Spray Bars and WhiteWater Spray Stations.

  • A high pressure supply system delivers high-pressure cold water to the WhiteWater Spray Stations. WhiteWater Spray Stations then apply the high- pressure cold water, alongside a parallel stream of low-pressure ozone-infused cold water, to dirty surfaces.
